Keto Chocolate No-Bake Cookies

Enjoy these tasty no-bake cookies that are keto-friendly and full of healthy ingredients and a rich chocolate flavor.

Ingredients:

  • 1 cup almond flour

  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup unsweetened shredded coconut

  • 1/2 cup sugar-free maple syrup

  • 1/2 cup almond butter

  • 1/4 cup coconut oil

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions:

In a mixing bowl, combine almond flour, cocoa powder, shredded coconut, and salt


In a saucepan over low heat, melt together sugar-free maple syrup, almond butter, coconut oil, and vanilla extract until smooth


Pour the wet mixture into the dry mixture and stir until well combined


Scoop tablespoon-sized portions of the dough onto a parchment-lined baking sheet


Press each cookie down gently with a fork to flatten


Place the baking sheet in the refrigerator for 30 minutes to set


Once set, store the cookies in an airtight container in the fridge

Cheddar Bacon Chicken Tenders

These Cheddar Bacon Chicken Tenders are a tasty take on regular chicken tenders. They are full of cheesy goodness and crispy bacon flavor.

Ingredients:

  • 1 lb chicken tenders

  • 1 cup shredded cheddar cheese

  • 6 slices bacon, cooked and crumbled

  • 1/2 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/4 teaspoon black pepper

  • 1/4 cup mayonnaise

Instructions:

Preheat oven to 400F 200C


In a bowl, combine shredded cheddar cheese, crumbled bacon, breadcrumbs, grated Parmesan cheese, garlic powder, paprika, and black pepper


Coat each chicken tender with mayonnaise


Dredge the coated chicken tenders in the cheddar bacon breadcrumb mixture, pressing gently to adhere


Place the coated chicken tenders on a baking sheet lined with parchment paper


Bake for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy


Serve hot with your favorite dipping sauce

Smoked Salt and Browned Butter Chocolate Chip Cookies

These delectable cookies combine the rich flavors of smoked salt and browned butter with the sweetness of chocolate chips.

Ingredients:

  • 1 cup unsalted butter

  • 1 cup granulated sugar

  • 1 cup brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon smoked salt

  • 2 cups chocolate chips

  • 1/2 cup chopped nuts optional

Instructions:

In a saucepan, melt the butter over medium heat


Continue cooking, swirling occasionally, until the butter turns a deep golden brown and has a nutty aroma


Remove from heat and let cool slightly


In a large bowl, whisk together the granulated sugar and brown sugar


Add the browned butter to the sugars and mix until well combined


Mix in the eggs one at a time, followed by the vanilla extract


In a separate bowl, whisk together the flour, baking soda, and smoked salt


Gradually add the dry ingredients to the wet ingredients, mixing until just combined


Fold in the chocolate chips and chopped nuts if using


Cover the dough and refrigerate for at least 1 hour, or overnight


Preheat the oven to 375F 190C and line baking sheets with parchment paper


Scoop rounded tablespoons of dough onto the prepared baking sheets


Bake for 10-12 minutes, or until the edges are golden but the centers are still slightly soft


Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely
